Ingredients- Thai-Choice Green Curry Paste 1/2 bottle (3 1/2 Tbsp)
- Vegetable oil 1 Tbsp
- Beef, thinly sliced 200g
- Eggplant, quartered 100g
- Thai-Choice Fish Sauce 2tsp
- Sugar 12 Tbsp
- Thai-Choice Instant Coconut Milk Powder 2 cups
- Warm water to taste
- Red chillies, sliced

Directions- Mix Thai-Choice Instant Coconut Powder in warm water and stir well to make Coconut Milk. Set aside.
- Heat vegetable oil in a sauce pan or wok, add Thai-Choice Green Curry Paste and stir well for 2 minutes.
- Add beef and continue to stir-fry for minutes, then add Coconut Milk. Bring to boil.
- Reduce heat, add sugar and eggplants, stir well. Simmer for 5 minutes. Serve hot over steamed Thai-Choice Jasmine Rice.
