Ingredients- Thai-Choice Rice Paper 4-6 pieces
- Thai-Choice Rice Vermicelli, boiled an drained 40 g
- Lettuce Leaves 4-6
- Prawns, boiled an drained 100 g
- Cucumber, julienne 40 g
- Carrot, julienne 40 g
- Sweet Basil Leaves to taste
- Egg, Omelette, shredded 2

Directions- Immerse an individual sheet of rice paper in water and remove after only a few seconds, leave it on a towel for one minute to soften.
- Place the rice paper on a plate and put a lettuce leaf on the centre of the rice paper.
- Arrange rice vermicelli, shrimp, carrot, cucumber and shredded omelette on the lettuce leaf.
- Fold on both sides of the rice paper. Then fold up one-third of paper over the filling. Continue to roll the paper to enclose the entire filling.
- Serve with Thai-Choice Spring Roll Dipping Sauce and fresh mint, sweet basil or other vegetables.
